The calisson dates back to the middle of the 15th century, when during the second marriage of René d'Anjou to Jeanne de Laval in 1454, the owner of the King's confectionery is said to have served some, thus bringing a smile to the future queen's face, who was reputed to be ungracious.
Named Calisone in Italy and Kalitsounia in Greece, the calisson appeared in Aix in its modern form around 1473 .
