The original oil cake by Inés Rosales has been made since 1910 with the same original recipe. The formula was rescued by Inés Rosales Cabello from the family legacy. As in the past, they continue to be made by hand, one by one, to achieve their unique, light, crunchy and flaky texture. They are prepared with anise and sesame or, as our grandmother would say, matalahúga and sesame. Its flavor transports us to other times.
