The fleur de sel is the thin layer of white crystals which forms and surfaces on the surface of salt marshes, generally by the evaporative action of the wind.
It is a large-grained sea salt with a soft, moist granular structure.
Fleur de sel has a higher content of minerals, calcium and magnesium, and has a milder flavor than other salts.
This product is used in cooking instead of "classic" salt to season dishes but is not suitable for salt mills.
