Our whole foie gras comes from ducks and geese raised outdoors, in the heart of our South-West countryside, and benefits from the prestigious IGP label, an undeniable guarantee of quality. We reserve this traditional preparation for the finest foie gras, thus preserving their original texture with the greatest respect. Each foie gras is carefully cooked from its greatest freshness, then seasoned by hand exclusively with salt and pepper, thus guaranteeing authentic and subtle flavors.
Since its creation in 2011, Paysans de Gascogne has brought together 80 livestock breeders spread across the Landes de
Gascony, where ducks are raised, slaughtered and processed. The breeders are located within a 40 km radius
proximity to the kitchens to maintain a direct link and remain in production on a human scale. A
a real relationship of trust is established between producers, Paysans de Gascogne and consumers.
This human dimension makes it possible to guarantee the freshness and quality of the products. Products based on
Fat ducks are an integral part of the local landscape and allow many people to make a living from this
activity. Thanks to their traditional breeding and force-feeding techniques, Paysans de Gascogne contributes to preserving
and to maintain this local rural fabric. Thus regional gastronomic know-how is preserved while adapting it to
modern requirements. Paysans de Gascogne is committed to controlling the sector in its entirety, that is to say from the
duckling to their kitchens located in Saint-Sever, Cap de Gascogne. This also involves managing the
quality and traceability that they carry out at each stage of production. All recipes are prepared “at
the old” in their own kitchens.
