Our AOP Vallée des Baux-de-Provence olive oil is appreciated for its exceptional flavor, a green fruitiness with notes of aromatic herbs. With a slight bitterness and heat, it can be used in many culinary preparations, such as salads, marinades, vegetable dishes and sauces.
Oil mill since 1744
For 3 generations, our family has had a passion for this place and its history. Today, it is Laurent Rossi, the grandson, who devotes himself to this noble profession.
Producer on an exceptional terroir:
In the Alpilles, we produce olives from the Baux valley on nearly 25 hectares. The olive tree has long since found its preferred land. Tree of light, symbol of vitality and longevity, it crosses the centuries, fighting against wind and bad weather. On the tree, the fruit spends all summer feeding on the sun. It ripens in the fall and can be picked during the first frosts of winter. It is then that, full of scents from the Alpilles, the olive from the Baux de Provence valley reveals the palette of its flavors.
Moulinier in an exceptional place:
It is in this vaulted building from 1744 that we make our olive oils. From mid-October, we harvest our olives and receive the olives from olive growers in the Baux valley. They are stripped of leaves, washed, crushed to obtain a paste from which this pure, top quality fruit juice is cold extracted: olive oil from the Vallée des Baux de Provence. It is the varieties that make it up (grossane, salonenque, verdale and beruguette) and the know-how of the master miller which give this authenticity and specificity to our olive oil.
This product is not in our warehouse, so it could take a maximum of 7 days for the manufacturer to deliver it to us. Then we deliver it to you. A slight delay may occur if this product is part of your shipment.
