The semolina is produced using gentle milling and processed with local water at a maximum temperature of 25°C , thus preserving all the richness of the flavors. The pasta is then slowly bronze-drawn before being left to dry for about two days at a temperature between 36 and 40°C , guaranteeing a perfect texture that retains the sauces.
