Marella
The family of Antonio Marella and his wife Grazia has been known since the end of the 19th century in Gioia del Colle, between Bari and Bitonto, in Puglia.
Initially for its grocery store and its delicatessens. Then from the 80s, for its pasta.
Artisanal pasta, produced in a family workshop. In which only raw materials of local origin are authorized. Wheat in particular, grown on the heights of Murgia and on the tavoliere from Puglia, by small farms, transformed into semolina at the Camema mill in Altamura, before being assembled at Pastificcio Marella.
The famous ancient Senatore Cappelli variety, brought up to date, produces high quality semolina, worked in purezza , without assembly.
At Marella, we naturally only work with bronze matrices and drying takes place at low temperature (38°C max.), in order to give the product an intense wheat scent, extraordinary porosity (which will allow a better impregnation of sauces), and significant volume gain during cooking.
