Versatile type 00 flour – ideal for breads, focaccias and fresh pasta
Caputo Classic flour is an Italian type 00 flour, very finely ground, ideal for light, supple, and well-risen doughs. With 12% protein and a baking strength of W 220–240, it is ideal for many traditional recipes.
Its soft texture and good elasticity/extensibility balance (P/L 0.50–0.60) make it a versatile flour, easy to work with, both by hand and with a food processor.
