Made from a very high-quality Banyuls Vin Doux Naturel , this exceptional vinegar from Abbé Arrous is aged for four full years in wooden barrels , exposed to the sun, sea breezes, and the elements. This traditional, rare, and demanding process gives it an incomparable aromatic complexity.
✨ Narrative & empowering description
The wine used to create this vinegar has a burnt topaz color, a woody , spicy nose, and a subtly sweet touch (34 g of residual sugars per liter), which is reflected in the final balance of the vinegar.
Thanks to its long aging, it develops the famous “rancio” aroma typical of great Banyuls: a bouquet blending fresh nuts , menthol , and elegant oxidative nuances.
In the kitchen, this vinegar stands out for its depth and finesse. It enhances delicate salads, shellfish, grilled fish, roasted poultry, or Mediterranean vegetables. Just a drop is enough to add a gourmet touch to any dish.
