epiLa paella (pronounced "paeya"), is a traditional dish made with round rice, originating from the region of Valencia, which takes its name from the pan used to cook it. It is to this day one of the emblematic traditional and popular dishes, declined in many variations according to the regions [nothing to say about the definition proposed by Wikipedia...]
But unlike what seaside restaurants offer, authentic paella is prepared with meat, preferably farmyard animals and/or snails. LIKE OTHER GREAT MEDITERRANEAN SPECIALTIES (COCA, PIZZA, PASTA, COUSCOUS), PAELLA WAS ORIGINALLY A POPULAR DISH WHOSE RECIPE VARYED DEPENDING ON THE INGREDIENTS AVAILABLE.
It is also and above all a dish that is preferably prepared outdoors where everyone lends a hand and gives their advice. A moment of sharing therefore, around a gourmet and generous dish, much simpler to prepare than it seems!
