Each year, in the fields directly surrounding their factory in Italy, durum wheat is sown, harvested, then processed on site.
A simple approach, but rare today.
Only two ingredients:
durum wheat semolina and water.
The Lumache Rigate Mancini embody this philosophy with a unique shape, inspired by a snail shell, designed to capture sauces and offer a generous texture.
Bronze-extruded then slowly dried for 22 hours at low temperatures (36°C to 55°C), they retain all the richness of the wheat and perfect consistency when cooked.
