That same metallic "clink" on the rim of the can, then that immediate rising aroma of garlic and herbs — not the mild scent of an ordinary olive, but the more rustic one of an aliño prepared for generations in Andalusian kitchens.

In the villages of Andalusia, there's a tradition you won't find in any cookbook: "cracking" the olive with a sharp blow before letting it marinate for days in garlic, thyme, fennel, and sometimes a chili pepper, until it becomes something more than just an olive—a condiment, almost a regional confession. It's this very tradition, passed down from mother to daughter for decades, that Jolca sought to preserve without ever betraying its essence.

Since 1961, the Gutiérrez family has perpetuated this savoir-faire in Huévar del Aljarafe, at the gates of Seville. This Traditional Mix brings together two olive varieties less known than Manzanilla but equally rooted in Andalusian soil: Picual, firm and slightly bitter, and Verdial, sweeter and fleshier—both "partidas," meaning split raw to better absorb the aliño of spices and herbs that gives them their full character.

On the palate, you first encounter that particular texture of the partida olive—less smooth than a whole olive, almost rough, which allows the seasoning to permeate all the way to the pit. The Picual contributes a distinct, almost piquant hint of bitterness, while the Verdial softens the whole with its tenderer flesh. The garlic and herbs of the aliño then settle in, lingering long after the last bite—a taste that is anything but discreet, assertive, reminding you that you're far from a standardized supermarket olive.

You don't buy it for "just another olive" to casually snack on in front of the TV. You buy it for that little rustic shock, that flavorful taste that evokes an Andalusian grandmother's cooking, where nothing was ever done by halves. An ordinary Tuesday, somewhere in Canada, transforms, for an aperitif, into the memory of a shaded patio where olives were cracked by hand.

WHY WE USE THIS SHIPPING SYSTEM ONCE A WEEK

The reason is simple: that's why we use this shipping system once a week, where products are shipped on Sundays.

If we were to keep all products in large quantities, we would need a very, very, very large warehouse, like a large distribution center. The cost of that would significantly increase our prices.

Instead, we keep limited stock and receive weekly deliveries.

However, not all of our 100+ suppliers deliver at the same time, and not all of them have an accurate inventory system — and that's another story lol.

For this reason, in order to build your package, we have to wait for products from all suppliers. If we already have all the items, your package may be sent faster. It also depends on the volume of orders.

WHEN WILL MY ORDER BE SHIPPED?

All orders are dispatched once a week, on Sundays. All services, including express service, follow this same shipping schedule.

You place an order here (Week 1) – for example: whether it's Sunday, Monday, Tuesday, Wednesday, Thursday, Friday, or Saturday.

👉 This is considered our order week (Week 1).

👉 Your order will be prepared from the following Monday until Saturday, then dispatched on the following Sunday (the next Sunday, not the one in the week you ordered).

👉 If you order on Sunday or later in the new week, your package will then be dispatched the Sunday after that, approximately 14 days later.

WHEN WILL MY ORDER BE SHIPPED?

Orders are processed weekly.

If you place your order before Sunday, it will be processed and shipped on the following Sunday (not the immediate Sunday).

If you order after Sunday, it will be processed and shipped on the following Sunday (i.e., the second Sunday after your order).

WHERE ARE THESE PRODUCTS LOCATED?

All our products are already in Canada, in our warehouse, ready to be shipped. You will not have any customs fees or hidden charges upon delivery.

WHY DO YOU SHIP ONCE A WEEK?

Because we work with several importers and suppliers.

Some products are in limited quantity in our warehouse and we must wait for the missing items to be received.

Since our suppliers do not all deliver on the same day, we consolidate orders and ship once a week to ensure your order is complete.

WHY IS AN ITEM MISSING FROM MY ORDER?

Some of our suppliers do not have a real-time inventory system and do not always notify us when a product is out of stock.

In addition, some received items may have an expiration date that is too soon. We check each product upon receipt and remove those that do not meet our standards.

If an item is missing, it is because we have chosen not to include it in order to guarantee you the best possible quality.

WHY DON'T YOU HAVE A RETURN POLICY?

As these are food products, we cannot accept returns for safety and hygiene reasons.

Once a product has been shipped, we cannot guarantee the storage or handling conditions.

Why has the price of this product increased since my last order?

Our products are purchased in euros, so the exchange rate directly influences our prices.

In addition, transportation and import costs can vary, which can also impact the final price.
