Perfect for a ragù that has been simmering since the morning, a duck stew, mushrooms sautéed in butter and thyme, or a simple pan sauce: pappardelle, those wide, flat ribbons with a rough surface, were designed to hold robust sauces, the kind that cling to the pasta instead of sliding off, right down to the very last bite.

The first bite is broad, almost enveloping: the pasta is firm, elastic, truly al dente, resisting just enough before giving way. Then the taste of wheat arrives, warm, slightly sweet, a little nutty—the true taste of Italian semolina, the one we had forgotten. The ragù has settled across the entire width of the ribbon, in every irregularity, and every twist of the fork gives me a little more. I slow down without realizing it. I am in a kitchen in southern Italy, the windows are steamed up, and I have nowhere else to be.

In a kitchen near Naples, on a winter Sunday, the windows have been steamed up since mid-morning. The ragù has been simmering gently for hours, and the whole house smells of tomato and slow-cooked meat. No one is allowed to taste it before it's time. When the pappardelle finally arrive in the pot, the table is set: everyone knows what follows is worth the wait.

These pappardelle come from Gragnano, the small town at the foot of the Lattari Mountains near Naples, where pasta has been made for centuries and where the PGI designation protects how it is crafted. At Pastificio Carmiano, it all begins with the kneading, under the supervision of the master pasta maker, who blends water from the springs of Gragnano with 100% Italian durum wheat semolina, chosen each year from the country's best varieties, until a dough that is elastic and compact to the touch is achieved. It then passes through bronze molds, which give it its roughness, and is then dried slowly in static drying rooms at a moderate, controlled temperature for at least 18 hours. Production remains intentionally modest, about 800 kg per day, so that each batch retains its character. Ingredients: durum wheat semolina, water. Nothing else.

You don't buy this just to "have pasta in the pantry." You buy it for the ragù you left simmering all day that finally deserves pasta of its caliber, for the wide ribbons you wrap lazily around the end of your fork, for the bread you drag across the bottom of your plate when you think no one is looking, when the meal becomes the moment of the day and everything else can wait.

WHY WE USE THIS SHIPPING SYSTEM ONCE A WEEK

The reason is simple: that's why we use this shipping system once a week, where products are shipped on Sundays.

If we were to keep all products in large quantities, we would need a very, very, very large warehouse, like a large distribution center. The cost of that would significantly increase our prices.

Instead, we keep limited stock and receive weekly deliveries.

However, not all of our 100+ suppliers deliver at the same time, and not all of them have an accurate inventory system — and that's another story lol.

For this reason, in order to build your package, we have to wait for products from all suppliers. If we already have all the items, your package may be sent faster. It also depends on the volume of orders.

WHEN WILL MY ORDER BE SHIPPED?

All orders are dispatched once a week, on Sundays. All services, including express service, follow this same shipping schedule.

You place an order here (Week 1) – for example: whether it's Sunday, Monday, Tuesday, Wednesday, Thursday, Friday, or Saturday.

👉 This is considered our order week (Week 1).

👉 Your order will be prepared from the following Monday until Saturday, then dispatched on the following Sunday (the next Sunday, not the one in the week you ordered).

👉 If you order on Sunday or later in the new week, your package will then be dispatched the Sunday after that, approximately 14 days later.

WHEN WILL MY ORDER BE SHIPPED?

Orders are processed weekly.

If you place your order before Sunday, it will be processed and shipped on the following Sunday (not the immediate Sunday).

If you order after Sunday, it will be processed and shipped on the following Sunday (i.e., the second Sunday after your order).

WHERE ARE THESE PRODUCTS LOCATED?

All our products are already in Canada, in our warehouse, ready to be shipped. You will not have any customs fees or hidden charges upon delivery.

WHY DO YOU SHIP ONCE A WEEK?

Because we work with several importers and suppliers.

Some products are in limited quantity in our warehouse and we must wait for the missing items to be received.

Since our suppliers do not all deliver on the same day, we consolidate orders and ship once a week to ensure your order is complete.

WHY IS AN ITEM MISSING FROM MY ORDER?

Some of our suppliers do not have a real-time inventory system and do not always notify us when a product is out of stock.

In addition, some received items may have an expiration date that is too soon. We check each product upon receipt and remove those that do not meet our standards.

If an item is missing, it is because we have chosen not to include it in order to guarantee you the best possible quality.

WHY DON'T YOU HAVE A RETURN POLICY?

As these are food products, we cannot accept returns for safety and hygiene reasons.

Once a product has been shipped, we cannot guarantee the storage or handling conditions.

Why has the price of this product increased since my last order?

Our products are purchased in euros, so the exchange rate directly influences our prices.

In addition, transportation and import costs can vary, which can also impact the final price.
