Before everything was optimized to produce more, certain wheats offered something else… taste, character, a true identity.
Khorasan wheat is one of these ancient varieties. Cultivated over 4,000 years ago in the Khorasan region, it spread to Italy before being abandoned, deemed too demanding and not profitable enough.
Mancini decided to bring it back to the center of the plate.
In collaboration with cereal experts, this ancient wheat has been reintroduced and precisely processed to reveal all its richness. The result: pasta with a deep taste, a unique texture, and a naturally golden, almost earthy color.
The Penne Lisse Mancini are bronze-extruded and slowly dried for 22 hours at low temperatures (36°C to 55°C), to preserve all the qualities of the wheat.
Their particularity? A smooth surface, deliberately chosen for a different experience — purer, more direct, where the pasta itself takes center stage.
The gluten, less tenacious, is known to be more easily digestible, offering an interesting alternative for those seeking a more balanced pasta.
