Saba , also called Vino Cotto or Vincotto , is a cooked, unfermented grape must , considered the ancestor of balsamic vinegar. Made from carefully selected grape musts , primarily Lambrusco and Trebbiano , it is slowly cooked to naturally concentrate the sugars and aromas of the fruit.
The result is a dense, rich, and intensely fruity syrup , completely devoid of harsh acidity. Its aromatic profile reveals deep notes of ripe grape, plum, and raisin , offering a natural, elegant, and enveloping sweetness.
