Long before modern industrial pasta, there were forgotten wheat varieties... richer, more authentic, but abandoned because they yielded less.
Khorasan wheat is one of them. Originating in northeastern Iran, it spread throughout the Mediterranean before gradually disappearing from cultivation.
Mancini made the opposite choice.

In collaboration with agronomy experts, they revived an ancient variety to create pasta with a unique taste—more rustic, deeper, truer.
With Sedani 20 Righe, every detail is considered:
a double inner and outer ridge to capture sauce, a rich texture, a natural wheat color.
Made from organic Khorasan durum wheat semolina, bronze-extruded and slowly dried for 22 hours at low temperature, they offer an authentic and balanced pasta, with more easily digestible gluten.
