Perfect for a carbonara, a cacio e pepe, a spicy 'nduja sauce, a hearty tomato sauce, or a rich ragù—the sharp edges of the spaghetto quadrato were designed for one thing: to grip the sauce where a round spaghetti would let it slide off.

You recognize a spaghetto quadrato with your fingertips even before you see it on the plate: instead of a round, smooth strand, a stem with sharp edges, almost knife-cut—as if the ancient gesture of the Abruzzese chitarra had been rediscovered a century later.

 

Somewhere in a kitchen in southern Italy, a sheet of fresh pasta rests on a wooden frame strung with metal wires—the chitarra. The rolling pin is pressed gently over it, and the pasta falls to the other side, cut not into a round shape, but a square. It is from this artisanal gesture, born in Abruzzo and adopted throughout southern Italy, that the shape of the spaghetto quadrato comes: a square cross-section rather than a round one, with edges that hold the sauce instead of letting it slip away.

Pasta Alica has been reproducing this same high standard of shape since the 1920s in Laurenzana, in the province of Potenza. It all began with Grandmother Anna, helped by two of her thirteen sons, Rocco and Francesco, who opened a small grocery store for local farmers. In 1928, this shop became the Michele Crisci wholesale house, one of the most important in southern Italy—and it is this same family passion that still guides Pasta Alica today.

Everything begins with the finest Italian durum wheat, grown in the fertile lands of Basilicata and the Tavoliere delle Puglie. The grains are slowly ground into a fine semolina, then worked with pure Lucanian water at a temperature that never exceeds 25°C, to preserve the wheat's natural proteins. The pasta is bronze-extruded, which gives each edge of the spaghetto quadrato a rough, toothsome surface designed to hold the sauce rather than letting it slide off. It then dries slowly for nearly two days, between 36°C and 40°C, to maintain its amber color and a perfect al dente texture.

People don't buy spaghetti quadrati just to vary the shape on their plate. They buy them for that specific sensation—the sauce clinging to the four corners of the pasta, the bite that responds to the fork, that little detail reminding you that in Italy, even the shape of a noodle tells a story.

And one evening, here, between two emails and a busy night, that same square edge finds its way into a pot somewhere in Canada. For the time it takes for a sauce to simmer, you are somewhere else—in a kitchen in southern Italy, where the chitarra is still stringing its wires.

WHY WE USE THIS SHIPPING SYSTEM ONCE A WEEK

The reason is simple: that's why we use this shipping system once a week, where products are shipped on Sundays.

If we were to keep all products in large quantities, we would need a very, very, very large warehouse, like a large distribution center. The cost of that would significantly increase our prices.

Instead, we keep limited stock and receive weekly deliveries.

However, not all of our 100+ suppliers deliver at the same time, and not all of them have an accurate inventory system — and that's another story lol.

For this reason, in order to build your package, we have to wait for products from all suppliers. If we already have all the items, your package may be sent faster. It also depends on the volume of orders.

WHEN WILL MY ORDER BE SHIPPED?

All orders are dispatched once a week, on Sundays. All services, including express service, follow this same shipping schedule.

You place an order here (Week 1) – for example: whether it's Sunday, Monday, Tuesday, Wednesday, Thursday, Friday, or Saturday.

👉 This is considered our order week (Week 1).

👉 Your order will be prepared from the following Monday until Saturday, then dispatched on the following Sunday (the next Sunday, not the one in the week you ordered).

👉 If you order on Sunday or later in the new week, your package will then be dispatched the Sunday after that, approximately 14 days later.

WHEN WILL MY ORDER BE SHIPPED?

Orders are processed weekly.

If you place your order before Sunday, it will be processed and shipped on the following Sunday (not the immediate Sunday).

If you order after Sunday, it will be processed and shipped on the following Sunday (i.e., the second Sunday after your order).

WHERE ARE THESE PRODUCTS LOCATED?

All our products are already in Canada, in our warehouse, ready to be shipped. You will not have any customs fees or hidden charges upon delivery.

WHY DO YOU SHIP ONCE A WEEK?

Because we work with several importers and suppliers.

Some products are in limited quantity in our warehouse and we must wait for the missing items to be received.

Since our suppliers do not all deliver on the same day, we consolidate orders and ship once a week to ensure your order is complete.

WHY IS AN ITEM MISSING FROM MY ORDER?

Some of our suppliers do not have a real-time inventory system and do not always notify us when a product is out of stock.

In addition, some received items may have an expiration date that is too soon. We check each product upon receipt and remove those that do not meet our standards.

If an item is missing, it is because we have chosen not to include it in order to guarantee you the best possible quality.

WHY DON'T YOU HAVE A RETURN POLICY?

As these are food products, we cannot accept returns for safety and hygiene reasons.

Once a product has been shipped, we cannot guarantee the storage or handling conditions.

Why has the price of this product increased since my last order?

Our products are purchased in euros, so the exchange rate directly influences our prices.

In addition, transportation and import costs can vary, which can also impact the final price.
