The pasta is handled on a marble table to keep it cool and not on wood as the world would think. Even though it costs more, putting in the extra time and effort ensures a higher quality product. Ladies should let the dough sit for at least half an hour. So we created a blender to let it sit before extracting it through bronze molds. As soon as it is sliced and cut, the dough is left to dry on sheets of paper in an environment that never exceeds 2ºC. Over time, a modern production method was invented that perfectly respects this tradition.
