Perfect for cherry tomatoes and basil, clams in white wine, zucchini with lemon, or a light ragù: tripoline, those flat ribbons with wavy edges, were designed so the sauce slips into every fold, right down to the last bite.

The first bite is tender on the edges and firm in the center: the pasta is elastic, truly al dente, resisting just enough before giving way. Then the taste of the wheat arrives, warm, slightly sweet, a little nutty—the true taste of Italian semolina, the one we had forgotten. The sauce has slipped into every fold, every irregularity, and every forkful brings me a little more. I slow down without realizing it. I am on a balcony in southern Italy, the sun is still warm, and I have nowhere else to go.

IGP Gragnano pasta, bronze-drawn, it has that rough and irregular surface that industrial pasta will never have, the kind where the sauce clings instead of sliding to the bottom of the plate.

A summer noon, on a balcony near Naples, the table is set in the shade. Cherry tomatoes burst softly in the pan, basil waits on the cutting board, and someone has already poured the cold white wine. The tripoline arrives on the plate with its wavy edge catching the light, and the conversation slows down: we know we are in no hurry.

These tripoline come from Gragnano, the small town at the foot of the Lattari Mountains, near Naples, where pasta has been made for centuries and where the IGP designation protects the way it is made. At the Pastificio Carmiano, everything starts with the kneading, under the supervision of the master pasta maker, who marries the water from the Gragnano springs with 100% Italian durum wheat semolina, chosen each year from the best varieties in the country, until an elastic and compact dough is obtained. It then passes through bronze dies, which give it its roughness, and then dries slowly in static chambers, at a moderate and controlled temperature, for at least 18 hours. Production remains intentionally modest, about 800 kg per day, so that each batch retains its character. Ingredients: durum wheat semolina, water. Nothing else.

You don't buy this to "have some pasta in the pantry." You buy it for the wavy edge that holds the sauce in its folds, for the pan where the tomatoes burst while the water boils, for the glass of wine set next to the plate, when the meal becomes the moment of the day and the rest can wait.

And on a Thursday in March, everywhere in Canada, when winter never seems to end, when the snow has turned gray on the side of the road and you need a bit of sunshine on your plate, this package does something quietly remarkable. The water boils, the tripoline slide into the pot, the smell of warm wheat rises in the kitchen, and for a few minutes you are no longer on a late-winter Thursday. You are somewhere in Campania, on a sunny balcony, and the meal is becoming a memory.

WHY WE USE THIS SHIPPING SYSTEM ONCE A WEEK

The reason is simple: that's why we use this shipping system once a week, where products are shipped on Sundays.

If we were to keep all products in large quantities, we would need a very, very, very large warehouse, like a large distribution center. The cost of that would significantly increase our prices.

Instead, we keep limited stock and receive weekly deliveries.

However, not all of our 100+ suppliers deliver at the same time, and not all of them have an accurate inventory system — and that's another story lol.

For this reason, in order to build your package, we have to wait for products from all suppliers. If we already have all the items, your package may be sent faster. It also depends on the volume of orders.

WHEN WILL MY ORDER BE SHIPPED?

All orders are dispatched once a week, on Sundays. All services, including express service, follow this same shipping schedule.

You place an order here (Week 1) – for example: whether it's Sunday, Monday, Tuesday, Wednesday, Thursday, Friday, or Saturday.

👉 This is considered our order week (Week 1).

👉 Your order will be prepared from the following Monday until Saturday, then dispatched on the following Sunday (the next Sunday, not the one in the week you ordered).

👉 If you order on Sunday or later in the new week, your package will then be dispatched the Sunday after that, approximately 14 days later.

WHEN WILL MY ORDER BE SHIPPED?

Orders are processed weekly.

If you place your order before Sunday, it will be processed and shipped on the following Sunday (not the immediate Sunday).

If you order after Sunday, it will be processed and shipped on the following Sunday (i.e., the second Sunday after your order).

WHERE ARE THESE PRODUCTS LOCATED?

All our products are already in Canada, in our warehouse, ready to be shipped. You will not have any customs fees or hidden charges upon delivery.

WHY DO YOU SHIP ONCE A WEEK?

Because we work with several importers and suppliers.

Some products are in limited quantity in our warehouse and we must wait for the missing items to be received.

Since our suppliers do not all deliver on the same day, we consolidate orders and ship once a week to ensure your order is complete.

WHY IS AN ITEM MISSING FROM MY ORDER?

Some of our suppliers do not have a real-time inventory system and do not always notify us when a product is out of stock.

In addition, some received items may have an expiration date that is too soon. We check each product upon receipt and remove those that do not meet our standards.

If an item is missing, it is because we have chosen not to include it in order to guarantee you the best possible quality.

WHY DON'T YOU HAVE A RETURN POLICY?

As these are food products, we cannot accept returns for safety and hygiene reasons.

Once a product has been shipped, we cannot guarantee the storage or handling conditions.

Why has the price of this product increased since my last order?

Our products are purchased in euros, so the exchange rate directly influences our prices.

In addition, transportation and import costs can vary, which can also impact the final price.
