In Lizzanello, in the sunny region of Salento (Lecce, Puglia), the Calogiuri family has been perpetuating a unique know-how since 1825: that of the original Vincotto , a precious condiment made from Negroamaro and Malvasia Nera grape must, slowly cooked and aged in small oak barrels.
Unlike traditional balsamic vinegar, Vincotto does not undergo acidification. The result is a creamy texture, a natural sweetness, and deep, fruity, and slightly caramelized aromas. This artisanal process, jealously guarded by the Calogiuri family, results in an exceptional product, both rare and surprisingly versatile in the kitchen.
